Ingredients
- ¾ lb ground bison (or use grass-fed ground beef)
- ½ cup chopped onion
- 2 carrots, grated
- ½ (6-oz) can tomato paste
- 2 Tbsp almond flour
- 1 large egg, lightly beaten
- 1 tsp dried rosemary
- ½ tsp garlic salt
- ½ tsp pepper
- ½ (8-oz) pkg sliced mushrooms
- 1½ Tbsp avocado oil, divided
- ¾ lb asparagus, trimmed
- 1 clove garlic, minced
- ¼ tsp salt
- ¼ tsp pepper
Instructions
Preheat oven to 350°F. Combine all ingredients in a large bowl. Mix until just combined. Shape into a loaf; place on a rack in a broiler pan coated with avocado oil. Bake 55 to 60 minutes or until meat is no longer pink and a meat thermometer inserted into center reads at least 165°F.
Cook mushrooms in 1 Tbsp oil in a large skillet over medium-high heat 6 to 8 minutes, stirring occasionally. Add ½ Tbsp oil, asparagus, garlic, salt, and pepper; cook 5 minutes or until asparagus is crisp-tender, stirring often.
