Ingredients
- 2 bone-in center cut pork chops (about 2 inches thick)
- 1 Tbsp avocado oil
- ½ onion, thinly sliced
- 2 peaches, pitted and sliced
- ¼ cup organic chicken broth
- 1 Tbsp chopped fresh basil
- 2 Tbsp extra virgin olive oil
- ½ Tbsp balsamic vinegar
- ½ Tbsp fresh lemon juice
- 1 tsp dried basil
- ¼ tsp salt
- ¼ tsp pepper
- ½ (10-oz) pkg baby spinach
Instructions
Sprinkle pork lightly with salt and pepper. Brown pork in hot oil in a cast-iron skillet over medium-high heat 4 to 5 minutes per side; remove from skillet, and keep warm. Add onion to skillet; reduce heat to medium. Sauté 5 minutes or until onion is browned and tender; stir in peaches. Return pork to skillet; add broth. Cover and simmer over medium heat 4 minutes or until pork is done; sprinkle with basil.
Whisk together oil, vinegar, lemon juice, basil, salt, and pepper in a bowl. Add spinach, and toss.
