- 1 1/2 pounds lean ground turkey
- 1 tablespoon olive oil
- 2 (15 ounce) cans tomato sauce
- 1 pound green peas, OR 1 cup shredded carrot
- 1 large, red onion, chopped
- 1 tablespoon garlic powder
- 1 tablespoon curry powder
- 1 (15 ounce) can light coconut milk
- In a medium to large soup pot, brown the turkey in the olive oil.
- Once the meat is browned, add in all other ingredients and simmer until the meat is fully cooked.
